Fall is in the air and so is the smell of baked goods, homemade soups, hearty chili’s, savory Crock-Pot dishes, casseroles and everything and anything that pumpkin can find its way into.
It’s the perfect time of year for foods that warm and comfort us. Best way to describe it : FOOD FOR THE SOUL
I’ll be sharing some of my favorite fall foods including some other awesome Autumn recipes from other bloggers who have shared their Fall favorites.
That being said I had recently been craving some Pumpkin Zucchini Bread so I decided to make a loaf. I got the Pumpkin and zucchini last weekend when I went to the Pumpkin Patch which is also a farm. They had lots of fresh goodies for a little of nothing. I love getting produce for a bargain. The remaining ingredients needed, I already had and didn’t have to purchase.
When I woke up Sunday morning all I could think about was making some Pumpkin Zucchini Bread so I pulled out all of my ingredients and got to work. An hour later my fresh homemade bread was ready to come out the oven. The wafting smell of warm cinnamon, nutmeg and cloves were all reminders of how much I enjoy this season and the comfort foods that come with it. Check for the recipe below.
INGREDIENTS :
3 Cups of All Purpose Flour ( I use Wheat Flour since it isn’t bleached and it’s heart healthy)
1 1/2 Tablespoons Pumpkin Pie Spice
1 Teaspoon Salt
1 Teaspoon Baking Soda
3 Eggs
1 Cup of Brown Sugar * ( White or Organic Sugar can be used as well)
1/2 Cup of Vegetable Oil
1/2 Cup of Water
1 Cup of Pumpkin Puree ( Not Pumpkin Pie Mix )
1 Tablespoon Vanilla Extract
2 Cups Grated Zucchini
1 Cup of Chopped Walnuts, Carrots or Raisins ( Optional )
*Using Brown Sugar as opposed to White creates a moist texture due to the molasses content in the Brown Sugar . I prefer a moist texture for my Banana and Zucchini Breads, so using Brown Sugar is good.

8 x 4 x 2 1/2 in. | 4 cups | 20 x 10 x 6 cm |
8 1/2×4 1/2×2 1/2 | 6 cups | 21 x 11 x 6 cm |
9 x 5 x 3 inches | 8 cups | 23 x 13 x 8 cm |

Next Steps :
1. Preheat Oven to 350 and lightly grease the loaf pan
2. Combine Flour, Pumpkin Spice, Cinnamon and Baking Soda and Salt in a large bowl
3. Combine Sugar, Pumpkin, Eggs, Oil, Water in a bowl and beat until mixed (Do Not Over Mix )
4. Add in Zucchini or other optional ingredients
5. Spoon mixture into loaf pan and bake anywhere between 45-55 minutes or until toothpick comes out clean
6. Remove from oven and allow bread to cool
7. Cut, Slice and Enjoy (Try some butter on top it’s so delicious)
